Colomba Bianca created a range of wines that carry the name ‘Resilience’ for a good reason. After an entire zone of vineyards was wiped out due to earthquakes in the 80’s, most wine producers left the area, abandoning their ruined crops and lands from fear of history repeating itself.
The winemakers at Colomba Bianca’s wine estate in this area instead decided to stay, fixing their wine crops and renaming this estate ‘Resilience’. Today, to honour the spirit of dedication and hope of the Sicilian Wine making community, all the wines produced from that same historical estate now carry the same name ‘Resilience’.
Insolia is renowned for its freshness and delightful mix of fruity and floral flavours. Being a Sicilian wine, the Insolia grapes have grown on highly volcanic soil, meaning a delicious slight minerality dances on the tongue when tasted.
To really honour the elegance and uniqueness of this dry white, I would pair foods that closely replicate the dishes of its traditional origin – Sicily (the seaside town of Trapani to be exact). For this reason, Insolia will shine as an accompaniment to an entrée of fish carpaccio, prawn cocktail, sushi, or other shellfish dishes.
If you’re not one for seafood, don’t fear! This wine is a wonderful match to lighter meals with vegetable bases; think light salads, corn chips with guacamole, or a light risotto. I’ve recently enjoyed a few bottles with friends over some creamy cheese on fresh herby baguettes, which was quite lovely.

2019 Falanghina Del Sannio, Sant’Agata dei Goti D.O.C,

What does our Somm say?
Stone fruits, citrus and tropical fruits please the nose when you breath in this wine.
It alludes to the absolute freshness you’ll find at your first sip. I love the dry, crisp and mineral dimensions of this wine.
The Falanghina del Sannio D.O.C. is surely fantastic as an aperitif. Chips & guacamole, fried fish bites, arancini, or even vegetable crudités let the wine stand out amongst other dry whites.
However, if you’d really like to see this drop ‘sing’, bring it together with its traditional food partner; any shellfish or seafood dish.
Some specific suggestions are carpaccio of tuna, kingfish or salmon. Seafood spaghetti is also a great choice. And for special occasions, crab or lobster would be divine.

2020 Primitivo Puglia I.G.P from Tenuta Viglione

What does our Somm say?
Yum! This Primitivo really packs a punch with flavour here. I was delighted to find more than just the usually wild strawberry and prune notes coming through, but some more complex dustier notes of leather, earth and mushroom. Divine!
These rich flavours and aromas are strengthened by the fine minerality of the vineyard’s soil and through the careful organic farming of the Zullo family of Tenuta Viglione.
Like most Southern Italian red wines, this drop shines most with Southern Italian cuisine. High acidity and intense notes of this wine mean that the perfect pairing to this drop would be roasted meats that have been marinated in a spicy rub or an organic, herby- charcoal chicken.
Spicy salamis, cured meats and even rich dips such as a smoked capsicum and chilli spread would do wonders with this wine. I also personally love this with a home cooked spaghetti with fresh chilli on top.
As you can see, this wine lends itself to the weekend BBQ warriors, AND your Aperitivo hour.

Wowee. What an enjoyable wine. There’s a reason this Nero d’Avola has been awarded so many prizes of recent. It is a powerhouse of aroma, taste and boldness. Having aged for an additional 6 months before bottling, this ‘Resilience’ Nero D’Avola is deserving of an equally robust meal pairing that can match its intensity of flavour.
For this reason, I would recommend Venison, beef, lamb or rich pasta sauce or casserole dishes. In particular, try this wine with a slow cooked beef stew, a traditional lasagna, or even a juicy beef burger with bacon. Good quality roasted meats or sausages, sweet & sour rabbit, or a grilled tuna steak are not bad food-mates either.
If you like to enjoy your bold reds outside of meal setting, get yourself setup with some quality aged cheese platter, including Fontina, Cheddar, or a Sheep’s Milk Cheese.
However you choose to enjoy this wine, make sure to get yourself some appropriate oversized wine glasses, designed to allow the wine to open up and bring out its structure and complexity further.

2016 Negroamaro Puglia I.G.P from Tenuta Viglione

What does our Somm say?
This Negroamaro is such a pleasure to drink, its rich flavour and aromas strengthened by the fine minerality of the vineyard’s soil and through the careful organic farming of the Zullo family of Tenuta Viglione.
Like most Southern Italian red wines, this drop shines most with Southern Italian cuisine. The spicy and intense notes of this wine mean you’d either want to pair it as an Aperitivo (think strong, aged cheeses and sun dried tomatoes) or make sure your meal has some bold flavours, so it wasn’t overwhelmed by this delicious drop.
Rich pasta sauces, Florentine steaks, roasted quail or really good quality sausages are sure winners when it comes to accompanying this wine. It also loves to be enjoyed with flavoursome vegetable dishes such as casseroles, rice-stuffed capsicum or roasted veggies in a red wine jus.
As you can see, this wine lends itself to the weekend BBQ warriors, AND the planned Italian themed dinner party.

What does our Somm say?
This wine is a go-to wine for big family festivities or when you’ve cooked something delicious at home.
The aromas are quite bold. With a lot of red and dark fruit on the nose, it surprises the drinker with incredibly balanced acidity and intensity in the mouth.
I find the history and stories behind this winery pretty captivating, and I’m super happy that once again we’ve found a winery that is trying to share a less known wine grape with the wider world. Viva the Aglianico grape!
This dry red pairs well with minestrone or bean soups, lasagne or tomato based pasta dishes. In terms of meat, any beef, lamb or roast chicken dishes would make a wonderful pairing.
As an aperitif, try this with soft cheeses and crunchy baked bread.
A solid, reliable and delicious southern Italian red.
